Whip up a tasty and simple snack in minutes with these tasty raspberry oat bars. Bite into a crunchy topping with a soft gooey middle infused with fruits. These buttery goodies are ideal for lunchboxes and smell incredible. (Inspired by the book Genius Desserts FOOD52 by Kristen Miglore)
Mega Easy Tasty Oat Bars with Raspberries
- 170g unsalted butter (melted and cooled)
- 100g chopped walnuts
- 190g cake flour
- 110g oatmeal
- 120g dark cane sugar (dark muscovado)
- 1/2 tsp bicarbonate of bicarbonate of soda
- 150g raspberries
- 120g raspberry jam
- pinch of salt
- Prepare the mixture
Pour the oatmeal into a bowl. Add the flour, soda, salt, nuts and sugar, then mix with a spoon. Add the melted butter and mix well. Do this by hand until moist crumbs form.
Place 2/3 of the oat mixture into a 20x20cm cake pan lined with baking paper. Smooth and press firmly. Spread the raspberry jam over the top and sprinkle with raspberries. Add the remaining oat mixture on top.
Place the cake pan into a preheated oven. Bake on the lowest rack at 180°C (gas mark 4) for 40 minutes. Remove from the oven and allow to cool completely.
Once the dessert has cooled, carefully remove from the baking paper and cut into rectangles.
