Mega Easy Tasty Oat Bars with Raspberries
Ingredients
- 170g unsalted butter (melted and cooled)
- 100g chopped walnuts
- 190g cake flour
- 110g oatmeal
- 120g dark cane sugar (dark muscovado)
- 1/2 tsp bicarbonate of bicarbonate of soda
- 150g raspberries
- 120g raspberry jam
- pinch of salt
Method
- Prepare the mixture
Pour the oatmeal into a bowl. Add the flour, soda, salt, nuts and sugar, then mix with a spoon. Add the melted butter and mix well. Do this by hand until moist crumbs form.
Place 2/3 of the oat mixture into a 20x20cm cake pan lined with baking paper. Smooth and press firmly. Spread the raspberry jam over the top and sprinkle with raspberries. Add the remaining oat mixture on top.
- Bake
Place the cake pan into a preheated oven. Bake on the lowest rack at 180°C (gas mark 4) for 40 minutes. Remove from the oven and allow to cool completely.
Once the dessert has cooled, carefully remove from the baking paper and cut into rectangles.
