This delectable banana cake is heavy on the chocolate and cocoa – offering a tasty, moist and aromatic dessert that satisfies that sweet tooth. I would recommend well-ripened bananas for an even richer aroma. Prep is quick and simple – highly recommended!

Simple Mega Chocolate Banana Cake

Ingredients

For the mixture:

  • 200g cake flour
  • 40g sugar-free cocoa powder
  • 1 tsp baking powder
  • 1 level tsp bicarbonate of soda
  • 1 tsp cinnamon
  • 3 very ripe, fairly large bananas (weight with skin about 570g)
  • 120ml oil
  • 2 eggs
  • 160g light brown cane sugar (or white granulated sugar if you don’t have brown)
  • 2 tsp vanilla extract
  • 100g of chopped dark chocolate

For the topping:

  • 100g dark chocolate
  • 100g double cream or extra thick double cream
  • chocolate chips or sprinkles, for decoration

Method

  1. Prepare both mixtures

Sift the flour and the cocoa powder into a bowl. Add the baking powder, the bicarbonate of soda and the cinnamon, then mix with a spoon.

Place the bananas into a second bowl and crush them with a fork to create a paste. Add the oil, the eggs, the sugar and the vanilla extract, then mix until all ingredients are combined.

Combine the dry and wet mixtures, then stir a couple of times with a spoon. Add the chopped chocolate and mix well with a spatula or spoon until combined. Do not overmix!

  1. Bake

Spread the mixture out evenly in a 25x12cm cake tin lined with baking paper. Place the cake tin onto the lowest rack of a preheated oven and bake at 170°C (gas mark 3) for about 60 minutes. Remove from the oven and let it cool completely.

  1. Prepare the topping

Take the cooled cake out of the pan, then remove the baking paper.

Pour the double cream into a saucepan and bring to the boil. Break the chocolate into small chunks and place in a bowl. Pour the hot double cream onto the chocolate and stir until the chocolate melts, creating a smooth mixture without lumps. If the topping is too thin, put it aside to cool down for 10 – 20 minutes. The darker the chocolate, the less likely this is to happen.

Decorate the top of the cake with the ready-made topping and sprinkle with chocolate chips.
